High Summer and Zucchini Slice

High summer, and normally I would expect to be spending my days in the shade while the garden burgeons without much effort from me, other than watering. This is the season of easy living, when the zucchini are embarrassing in shape and profusion, and it is too hot to bake zucchini cake. Summer is fun, but heat assails you after a while. Moving becomes difficult. Clothes are wearisome. The earth is hard and dry. I look at trees that stand under the sun all day long and marvel at their endurance.

But the turning of the year should be about reflection, even though the bright light discourages it. The world of daylight and summer is only a quarter of human existence, and that there is an internal and magical world of dimmed light, to which we must all return before long, if not to rest then to reflect.

 

Hmmm. A bit to philosophical - so here is a recipe for zucchini slice to lighten the mood.

Ingredients: Grated zucchini, eggs, cheese, herbs, onion, just enough flour to bind it. (Adjust all quantitutes depending on what you have in the garden. The consistency should be thick and chunky, not sloppy.)

 

Mix everything together, put in a greased and lined baking tray, and cook until golden on top. Slice and serve.

And another hint: If you are planting seedlings in mid-summer, water very well then rig up some shade - an old sheet on stakes will do - to protect them from the full force of the sun until they are well established.
