Pork and pumpkin over rice.
Thinly slice about a lb of pork tenderloin, a large sweet onion and a smallish pumpkin (after de-seeding and peeling the pumpkin of course) Stir fry the pork in a bit of olive oil, remove from pan, stir fry onions, and then add pumpkin, and pork back in. Add a bit of chicken broth, cumin, salt and pepper to taste. Put a lid on it, and dteam till pumpkin is tender. Serve over rice. Yummy!!
(Sorry no measurements, I’m a bit of a dump and taste cook)

I have always cooked pumpkin the way my grandmother did. Peel and seed it, cut it into chunks, steam it until tender, mash it with salt and pepper and butter and for a real kicker add a few grates of fresh nutmeg. My grandmother always had a nutmeg in the kitchen and there is no comparison with fresh grated nutmeg and the canned stuff. Like two different spices. Any left overs were made into patties the next day, pan fried and served with maple syrup for breakfast in place of the usual pancakes.

I just tasted Pumpkin Wine at a friends house last night. Along with Green Apple, Rhubarb and Dandelion…yes those nasty little yellow weeds in your grass. I thought he was crazy but they all were really not that bad at all. I would say I enjoyed the Green Apple the most as I am not a wine drinker.
Just something I never even imagined coming from pumpkins!
